Fruit Antipasti

Fruit Antipasti. Serves 6
HONEYDEW BLUEBERRY WITH LIME
1 Tbsp honey
1 tsp finely grated lime zest
1 Tbsp lime juice
1/2 honeydew melon, peeled and seeded
1 cup fresh blueberries
GRAPEFRUIT WATERMELON WITH ROOIBOS TEA
2 red grapefruit
1 rooibos tea bag
2 Tbsp honey
2 cups diced watermelon, cut into 1-inch pieces
PEACH BLACKBERRY WITH CINNAMON MAPLE
1/4 cup pure maple syrup
1/2 tsp ground cinnamon
3 cups peeled and sliced peaches
1 cup fresh blackberries

Instructions
- HONEY DEW BLUEBERRY WITH LIME
- Stir the honey and lime zest and juice to blend. Slice the honeydew as thinly as possible. Arrange the melon and berries in a bowl or on a platter and spoon the honey mixture overtop.
- GRAPEFRUIT WATERMELON WITH ROOIBOS TEA
- Peel the grapefruit, including the membrane, using a serrated knife. Cut away the grapefruit segments from the membrane over a bowl to reserve the juices. Heat the juices with the rooibos tea and honey over low heat until warm.
- Let the tea bag sit for 10 minutes then remove and let the tea cool. Gently toss the grapefruit and watermelon with the tea mixture and chill until ready to serve.
- PEACH BLACKBERRY WITH CINNAMON MAPLE
- Stir the maple syrup and cinnamon to combine. Toss in the peaches and blackberries and chill until ready to serve.
FRESH TAKE
I have always loved how sweet, low-acidity fruits like melon can be brought to life with a little lime juice. Sprinkled with colorful blueberries, this dish goes from boringly basic to stunningly spectacular.
Rooibos tea is a fluorideladen, caffeine-free flavor burst that is perfect as an infusion for citrus. Think outside the box (or the bag, as it were). Tea is a great flavor enhancer, and can be used to flavor anything from custards to barbecue sauce, wherever the transfer in liquid through heat happens.
Yum! Peaches and blackberries are at their peak together, so they’re meant to be enjoyed together. A breakfast-y hint of maple and cinnamon sparkles them up for a sunrise.
