Smart Start Breakfast Sandwich

BC Ferries Health Check Breakfast Sandwich

1 large fresh egg
Small amount of salad oil
1 English muffin
1 slice (20 gr.) smoked turkey breast
3 baby spinach leaves
1 tsp (15ml.) of Pace salsa
1 slice (11 gr.) Swiss cheese
1 slice of tomato
Fresh fruit

Instructions
- Heat frying pan with small amount of salad oil
- Add 1 large fresh egg and cook gently until white is firm
- Using egg ring for proper appearance and presentation
- Cut 1 English muffin in half and toast until golden brown
- Heat 1 slice (20 gr.) smoked turkey breast and hold hot
- Place 3 baby spinach leaves on bottom half of English muffin, spreading out for coverage
- Place 1 tsp (15ml.) of Pace salsa on top of spinach spreading slightly. (Use spoon)
- Place cooked egg on top of salsa
- Place sliced smoked turkey breast on top of egg
- Place 1 slice (11 gr.) Swiss cheese on top of turkey
- Place 1 slice of tomato on top of Swiss cheese
- Add top part of English muffin
- Serve on plate with fresh fruit.
